Meet Greg
Gregory J. Delgadillo is the Executive Chef of EAT31. Born in Salinas California, Gregory is bringing 14 years of cooking experience.
He has worked in notable restaurants such as; Saison/San Fransisco Ca. , Aubergine/Carmel Ca., Maligne/Seaside Ca., Kaji/Kyoto JP. Including internships at; In de Wulf/Dranouter Bel., Benu/San Fransisco.
You may also know him from the local favorite chicken and rice concept, The Rice Gai.
Greg created the EAT31 concept with mind set of having a community driven full service restaurant that allows the 831 locals a restaurant they can call their own.
Greg believes EAT31 can be a home base for foodies, creatives and entrepreneurs that have the same dream he had when he was young and strives to deliver a premier dining spot with a neighborhood vibe.
Meet Elias
Elias Faris, the General Manager and Executive Sous Chef of Eat31.
Born in San Jose, California, he started his path out of high school , when he went to culinary school to learn the trade. From there he refined his craft in respected upscale restaurants, including Dio Deka (Los Gatos), The Village Pub (Woodside), and the Culinary Garden at The French Laundry.
Years later, Elias completed a degree in horticulture and crop science at Chico Sate, building toward a bigger goal: applying that knowledge to his own restaurant, and eventually his own culinary garden.
In 2023 he made Monterey county his home, drawn to the region’s agriculture and community around it.
Through EAT31, Elias partnered with Chef Gregory Delgadillo to build something rooted in that vision.
Together their goal is simple: Upscale seasonal offerings that are apart of every day life for the community, that are not just special occasions.
Meet Jacob
Jacob Gonzales Butorac was born in Las Vegas, Nevada and raised in Salinas, California. He as developed a career built around the hospitality industry, wine and music.
His experience comes in many forms which includes shaping pizza programs in local restaurants such as Alvarado street Brewery, Rise + Roam, and Portobellos on Main, where he developed a deep appreciation for quality ingredients, craftsmanship, and creating exceptional guest experiences.
Jacob brings a well rounded knowledge having worked in the wine industry with Sheid Vineyards and Albatross Ridge. He has developed an ever growing passion for hospitality and service.
Along side his culinary career, he is a touring musician with the local band, The Dead Cassettes.
His unique set of skills has allowed him to create memorable experiences that foster an everlasting connection with the community.
